Veggie Meal Plan

It would appear that I am to be solo this week. This both terrifies me (I'M TIIIRRREEEDDD) and gives me total and complete permission to eat nothing but turkish bread and iceblocks for dinner the whole time. Not quite a fair trade-off, but it'll do.

I made a batch of these banana chia muffins and put them in the freezer. My tired ass is going to thank me later, even though I was cursing them at 9pm when I had a thousand other things in the oven and couldn't figure out why I thought making these muffins was a necessity akin to there always being chips in the house.

I also cooked and portioned and froze all Veggie Baby's dinners so I'm not struck at 5.30 getting home from work and realising something still needs to be cooked and cooled for the starving darling. It's done. I'm going to hug myself those nights, I can feel it.

For me... this is how my dinner plan looks at the moment. Considering I traipsed the aisles of the supermarket in all my queasy glory, looking at and immediately vetoing every item I saw because the idea of it made me want to hurl. Never mind that I'll probably need it on Wednesday at 2.30 or Friday at 4 - if I couldn't bear the thought of it, it didn't go in the trolley.

Veggie Meal Plan

Oh boy. If there's one thing I can't wait for, it's for this trimester to be over. There's nothing quite like that vague queasiness that strikes you down, leaving you stranded on the couch wishing someone would feed you ice-cold grapes and tell you not to get up for the rest of the day.

I've been so very fortunate this time around to not suffer as much as I did last time, but I'm usually pretty green after every meal. Even if I only eat baby-sized portions! I can't get enough of fresh-squeezed, cold juice and quinoa tabbouleh with lots and lots of lemon. Other than that I have pretty much no appetite to speak of.

Doesn't stop me having to figure out what to feed the rest of my brood, however! This is what I've come up with for this week.  I'll be the one on the couch, moaning.

Veggie Meal Plan

I'll be spending parts of this week mourning the fact we don't have a barbecue. These mushrooms are so good when smoky and charred! Instead they'll have that boring "I've-been-cooked-in-a-cheap-non-stick-frypan-what-of-it?" flavour. Lucky they'll still be delicious.

I'm also thinking of recreating a couple of Meet Me At Mikes recipes... I saw that potato curry recipe and my mouth cried. YUM!

♥ cajun mushrooms with potato salad ♥
♥ ratatouille pasta ♥
♥ Korean bbq stir fry with hokkien noodles ♥
♥ felafel kebabs with hommous, tabbouleh and tzaziki ♥
♥ pumpkin and feta brown rice burgers ♥

♥ cherry afternoon tea cakes ♥

See you at the beach!

Veggie Meal Plan

With my head still firmly in holiday mode, and my diary fast filling up with things that mean I should really get my act together, dinners around here are still lazy summer style.

God help me if I have to put the oven on.

So with that, (and so I can get back to my book before the baby wakes up), here is what's going down in the Veggie Household this week:

♥ schnitzel with honey-soy sesame sauteed greens ♥
♥ antipasto pasta salad ♥
♥ mexican toasted sandwiches ♥
♥ sushi and veggie dumplings ♥
♥ tacos ♥

♥♥♥

♥ banana pancakes ♥

♥♥♥

♥ apple-apricot chunky mix ♥
♥ cold potato cubes ♥

Veggie Meal Plan

It's Sunday again, and excuse me if I say that came around fast! This week has been a blur... come to think of it, so have the last eight months. Veggie Baby is almost crawling, and is learning to go from sitting to being on her stomach without knocking her brand-new front teeth out on the mat. You wouldn't see me launching face-first onto the ground in an effort to get to a toy faster... it wouldn't be anywhere near as cute!

This week my brother-in-law and his girlfriend (Veggie Uncle and Aunt) have returned from two years in Canada. They tell me they missed my cooking, so I'm pleased to make them some old favourites and catch up over a nice dinner on the back deck. It's getting super-hot around here these days.

♥ veggie burgers with homemade buns and sweet potato fries ♥
♥ ultra-garlicky fettuccine alfredo and cobb loaf ♥
♥ eggplant steaks with kipfler potato salad and corn on the cob ♥
♥ schnitzel with creamy mash and honey carrots ♥

♥♥♥

♥ buttery scones ♥

Veggie Meal Plan

I haven't been well, so this week's meal plan is really quite hastily put together. I'm also thinking of palming the cooking off to Veggie Dad, given he won't be at football training as much in the evenings any more. As always, though - it's good stuff!

Am dipping back into an old post for the lunchboxes this week, and making raspberry buns from a war-era cookbook of my grandmother's. The post is worth checking out for the photos alone! The cookbook is adorably quaint :)

♥ gnocchi with cherry tomato sauce ♥
♥ thai stir fry with hokkien noodles ♥
♥ vegan bangers and mash ♥
♥ pumpkin and feta tart with basil and cherry tomatoes ♥
♥ crispy fillets with corn, asparagus and secret weapon potato salad ♥

♥♥♥

♥ raspberry buns ♥

♥♥♥

♥ herbed pumpkin and rice puree ♥
♥ creamy oats with sultana and pear ♥

Veggie Mama's Meatless Mondays

Are you doing Meatless Mondays? Wanting to? Wanting to know more about it?

It's pretty simple - just one day a week, cut out meat. Some people simply make one meatless dinner a week, and that's fine too. I'll never shout from the rooftops and force you to convert, but I'm a huge fan of just cutting back, or making a different meal every now and then.

Sometimes you just make dinner and it's accidentally veggie. You haven't set out for it to be that way, but it just doesn't have any meat in it. And I bet it's delicious.

I ain't preaching, so if you want more information, the Australian site is here, and the worldwide site here.
I do recommend you read them, there's a lot of cool stuff and great explanations of the reasons behind it.

I've decided to start a linky - mostly for inspiration, but it's cool also to have somewhere to be accountable, if that helps. So link up if you've made a meatless dinner - whether for Meatless Monday, or just because, or even accidentally! It's a bit of fun, with excellent consequences :)

♥ The linky will be up at 9am every Monday morning, and will stay up until the following Sunday.

♥ Grab the Meatless Monday button and put it in your post, and even on your sidebar if you're feeling generous.

♥ Visit at least one other blogger and leave some love. This is so much more cool if we're in it together!

Happy eating, folks! Can't wait to see what you all come up with.
