Veggie meal plan

This week, we're on HOLIDAYS!

YAY!


we are THIS excited.


School is out, the weather's been great (except for yesterday), and we're going to take things easy. Last school holidays before VB 2.0, so I intend to do the least amount possible. Including boring dinnery things.

So this means we'll be mostly sticking to easy favourites, with a couple of new experiments thrown in for good measure:

Dinner
ravioli with ratatouille sauce + garlic bread
crumbed and fried tofu with apricot chicken sauce (experiment time!), rice and greens
caramelised onion and lentil salad (from last week's plan)
homemade veggie pizza
yakisoba. again. it's good stuff!


For the baby
some kind of fig-newton style cookie
sugar-free apple-cinnamon muffins


Lunchbox baking
NONE. w00t! ... although I'm inclined to make Anzac biscuits for the hell of it.

Today we'll take our usual trip to the farmer's markets and hope we can find the guy from last week who had the amazing avocados. We're also headed to the Pregnancy and Baby expo and to replace my phone, which I smashed yesterday in my haste to vacate my shopping-mall parking spot for someone who was waiting. EEP.

I still have a fair bit of marking to do, as does Veggie Dad, so I think we'll pick a night, put some music on and get stuck into it so we can enjoy the rest of our time off. I have plenty of posts + freelance stuff to take care of, so maybe I can palm the cooking off to him!

VB turned 15 months this week, and is absolutely ruling at walking now so I think I'll take her to the park a couple of times and for a walk along the beach on a nice afternoon. She's also quite competent with a spoon, so there's a lot more mashed veggies in her future - funnily enough, she'll eat those but she won't eat them as finger food, and finger food is pretty much all she's eaten for about six months. Toddlers are full of surprises... literally and figuratively, haha.

Veggie Meal Plan



Lots of wintery goodness as it's cold here at night. During the day it's hot and sunny and with just a slight wind, but the evenings are a little frosty. I know, don't hate me too much.

Lots of veggie-packed goodness this week, I'm off to the farmer's markets to get my usual haul in a moment. The veggie filo will be filled with whatever looks good, and I'll probably add a few bits and pieces to the lentil + onion salad. Whatever is left over gets mooshed with mashed potato and made into bubble and squeak patties for the babe. I'll also give her bits of the baked potatoes and some of the soup, thickened so she can practice her spoon skills. She's surprised me this week with how good she is so we'll be doing it a lot more. I haven't spoon-fed her in six months, it's all been finger food and whatever she could mash into her face. My list of food for her to try just increased a millionfold!

We had a great time in Melbourne last weekend, eating dumplings, going to the markets and the museum, and going to our friend's wedding. I always crave Asian food when I visit, and I always leave thinking I should make it more often. This meal plan reflects none of that! Maybe next week.

Anyway, this week appears to be very cruisy, only a meeting on Wednesday, a bit of work from home and a stack of law workbooks to mark, leaving the rest of the week free to read the six bags of books I brought home from the Lifeline Bookfest and finish a couple of crochet orders. I also appear to be on the tail end of whatever vicious malady struck me last week, so there's good times to be had. Well, as long as I keep ignoring the state of my laundry.

Veggie Meal Plan

Happy Mother's Day, peeps! And to those whose mamas can't be here, I'm thinking of you. And those who are struggling to be mamas. And to those who don't have a good relationship with your mother... I think of you most of all.

This week is a bit of a variety of things... all random suggestions in my head that I'll play with when the time comes.


Except the pumpkin and haloumi salad, two recipes of which you can find here and here. And the refried bean recipe from yesterday will be going into our enchiladas. YUM!

I hope you're getting something delicious made or delivered to you this evening.

I'm off to enjoy copious amounts of tea, handmade crafts and sloppy kisses. Being a mum rules.

Veggie Meal Plan

It won't stop raining.

I'm serious - I've started wearing gumboots (ok, cute ones but still gumboots) to work because I can't stand having cold, wet feet all day. It's impossible to get a park at my nearest shopping centre, I'm wary of taking the baby anywhere and the cat is constantly trying to get on my lap in all his wet-fur glory.

Therefore, when I looked for inspiration for dinners this week I didn't pull out a February issue of any food magazine, I picked July. All the comfort food for winter.

I bet after all that effort the rain will go away and it will be terribly hot and I'll cry into my risotto. Aw hell, any weather is risotto weather if you're me.

Lots of baking in this one, which I love because it makes everything so, so easy! I can sit down for a minute while it cooks. One lazy dinner of burritos that I may or may not fob off onto Veggie Dad to make. Everything makes good leftovers, so work lunches are sorted!

Kid dinners this week will include pasta with peas and cheese, and veggie congee. We're going to try and give her the spoon more often to learn how to use it. She's mostly self-fed but dinners usually stray into us feeding her territory. I'm pretty sure early spoon skills are going to be very, very helpful when VB 2.0 arrives.

Lunchbox treat will be apple tea cake, I think. Yum.

Veggie Meal Plan


It would appear that I am to be solo this week. This both terrifies me (I'M TIIIRRREEEDDD) and gives me total and complete permission to eat nothing but turkish bread and iceblocks for dinner the whole time. Not quite a fair trade-off, but it'll do.

I made a batch of these banana chia muffins and put them in the freezer. My tired ass is going to thank me later, even though I was cursing them at 9pm when I had a thousand other things in the oven and couldn't figure out why I thought making these muffins was a necessity akin to there always being chips in the house.

I also cooked and portioned and froze all Veggie Baby's dinners so I'm not struck at 5.30 getting home from work and realising something still needs to be cooked and cooled for the starving darling. It's done. I'm going to hug myself those nights, I can feel it.

For me... this is how my dinner plan looks at the moment. Considering I traipsed the aisles of the supermarket in all my queasy glory, looking at and immediately vetoing every item I saw because the idea of it made me want to hurl. Never mind that I'll probably need it on Wednesday at 2.30 or Friday at 4 - if I couldn't bear the thought of it, it didn't go in the trolley.

I'm all about easy right now. Until I can get off this damn couch, everything is going to take the minimum of effort. And given it's still quite hot, most of these dishes are good for summery eves.

Veggie Meal Plan

Oh boy. If there's one thing I can't wait for, it's for this trimester to be over. There's nothing quite like that vague queasiness that strikes you down, leaving you stranded on the couch wishing someone would feed you ice-cold grapes and tell you not to get up for the rest of the day.

I've been so very fortunate this time around to not suffer as much as I did last time, but I'm usually pretty green after every meal. Even if I only eat baby-sized portions! I can't get enough of fresh-squeezed, cold juice and quinoa tabbouleh with lots and lots of lemon. Other than that I have pretty much no appetite to speak of.

Doesn't stop me having to figure out what to feed the rest of my brood, however! This is what I've come up with for this week.  I'll be the one on the couch, moaning.


 roasted eggplant and sundried tomato fettuccine 
 crispy strips, honey-soy sesame veggie saute 
 tacos 
 baked sweet potato salad with pecans 
 grilled balsamic mushrooms with baked potatoes and salad

Veggie Meal Plan


I'll be spending parts of this week mourning the fact we don't have a barbecue. These mushrooms are so good when smoky and charred! Instead they'll have that boring "I've-been-cooked-in-a-cheap-non-stick-frypan-what-of-it?" flavour. Lucky they'll still be delicious. 

I'm also thinking of recreating a couple of Meet Me At Mikes recipes... I saw that potato curry recipe and my mouth cried. YUM!

Veggie Meal Plan

With my head still firmly in holiday mode, and my diary fast filling up with things that mean I should really get my act together, dinners around here are still lazy summer style.

God help me if I have to put the oven on.

So with that, (and so I can get back to my book before the baby wakes up), here is what's going down in the Veggie Household this week:

Veggie Meal Plan

This week is my first proper work-free week since classes ended a little while ago. I'm so looking forward to reading more and getting through the thousands of projects I've started and desperately want to do. I've got a post organised for next week of all the things I have on the go, and I'm dying to share because they're just so DAMN cute!

Meanwhile, it's also the week before my Tokyo trip, so I will be frantically making the baby a matching beanie-and-scarf set from pink fairy floss wool and a sweet little snowflake motif. And some mittens because it's gonna be chilly. Oh, and I have to pack and do a million other things.

Meals this week are going to be easy and probably Asian because I'm too excited about our trip and kind of want to be eating everything now. Yesterday I made an awesome veg/vegan banquet of avocado sushi, edamame, beef balls, dim sims and rice paper rolls with a lime and chilli dipping sauce. I love when I get inspired!

Veggie Meal Plan

It's Sunday again, and excuse me if I say that came around fast! This week has been a blur... come to think of it, so have the last eight months. Veggie Baby is almost crawling, and is learning to go from sitting to being on her stomach without knocking her brand-new front teeth out on the mat. You wouldn't see me launching face-first onto the ground in an effort to get to a toy faster... it wouldn't be anywhere near as cute!

This week my brother-in-law and his girlfriend (Veggie Uncle and Aunt) have returned from two years in Canada. They tell me they missed my cooking, so I'm pleased to make them some old favourites and catch up over a nice dinner on the back deck. It's getting super-hot around here these days.

Veggie Meal Plan

I haven't been well, so this week's meal plan is really quite hastily put together. I'm also thinking of palming the cooking off to Veggie Dad, given he won't be at football training as much in the evenings any more. As always, though - it's good stuff!

Am dipping back into an old post for the lunchboxes this week, and making raspberry buns from a war-era cookbook of my grandmother's. The post is worth checking out for the photos alone! The cookbook is adorably quaint :)
